BLC & Chicken Coconut Curry

Lunch the other day: a chicken breast & bacon sandwich. I've decided my life needs more bacon.



I made a really good Thai Coconut Chicken Curry with asparagus tonight for dinner. I took the suggestions of some reviewers on allrecipes.com and added some extra ingredients. Often the recipes you find there are a little bland, so it pays to see what others have done to make them taste better.

Heated up sesame & olive oil, garlic, ginger, and kosher salt in the wok, then added asparagus, peas, carrots, green onion, and chicken.



Next goes in coconut milk, curry powder, juice from 1 lime, cumin, ground pepper, and a little hot chili sauce.



I didn't feel like making Jasmine rice, so I soaked rice noodles in hot water instead. I don't have a mortar and pestle (yet), so I had to crush these peanuts with a handle and mug.


The sauce should cook down and thicken


Then it's time to plate



And no, I didn't try and make it look fancy for the blog. It would have looked like this whether I took pictures or not. It was crazy good too.

That Thai dish looks delicious. I remember eating aparagus at Grandma's, but not at home. We love it (even Spencer) so we eat it a lot more than the average family. I love when it goes on sale.
